About the Author
Elisabeth Carlsson was born on a farm in Sweden and left as a teenager to explore the world, living in both Madrid and New York, and finally settling in London with her family. Having spent over a decade working in book publishing, Elisabeth is now a functional nutritionist and lifestyle coach and works with people all over the world using the Balance Mindset to help them find true and lasting health. She uses food as medicine and focuses on empowering and educating, giving her clients easy-to-use tools to help them live a healthy, balanced life. Self-care for her is about seeking out nature where she can, growing her own fruit and vegetables, and making time for plenty of fika moments in her day.
